The Great Cookie Project Continues

I’m trying to complete all my baking by Tuesday evening but I’m not so sure that I’m on schedule. I baked off most of my frozen cookie dough that I prepared earlier and I must say some work better than others. The peanut butter chocolate spiral cookies are beautiful and delicious but I’ve never hated a cookie dough as much as this recipe. Right off the bat, this dough was difficult to work with during the shaping process. I first had to roll out the peanut butter cookie dough and the chocolate cookie dough into equal size rectangles. The dough was tacky and fragile at the same time, constantly threatening to crack. When I tried to roll up the dough into a log, it was falling apart like you wouldn’t believe so it was a challenge to get the spiral pattern nice and tight. When I tried to slice it for baking, the whole log broke apart into little pieces. I was swearing under my breath every step of the way. However, the end product is marvelous. It is tender like a peanut butter cookie should plus the flavour is just amazing. I don’t think I would like to put myself through the ordeal of working with this recipe again but it will be a tough call judging by the quality of the final product.

The white chocolate lemon cookie is a bit of a let down. It is a little greasy and it doesn’t hold its shape well during baking. The flavour is kinda blah to me. I don’t think I’ll be using this recipe again.

The cranberry pistachio shortbread is picture perfect as promised. The green of the pistachio and the red of the cranberries look so festive together. This recipe is easy to work with. I’m sure it will return to my holiday baking repertoire in years to come.

The tweed crisp looks a little plain jane but I love the flavour. This is one crispy cookie due to the addition of coconut in the dough. Of all the icebox cookies that I prepared, this one slices the best. Each cookie kept the perfect round shape with ease.

Two more doughs to prepare and I will be ready to package them. So much to do, so little time.
